For the Dough:
  • 1 cup or 250 gms Maida (Refined Flour)
  • 4 tbsp ghee (Clarified Butter)
  • 1 tbsp rice flour
  • Puvi Cold Pressed Groundnut oil for frying
For the Sugar Syrup:
  • ¾ cup or 100 gm sugar
  • 1/3 cup water
  • ½ tsp elaichi (cardamom powder)

PREPARATION & Chirote Recipe: 

  • In a bowl, mix maida, ghee and knead into dough adding water gradually.
  • Add ½ tsp Puvi cold pressed Groundnut oil and knead the dough.
  • Dough should be soft yet firm. Cover and set aside for 15-20 minutes.
Sugar Syrup:
  • Add sugar and water in a deep pan and bring it to boil. Once the syrup starts boiling, reduce the flame to low and cook until the sugar syrup is of one-string consistency.
  • Switch off the flame and add cardamom powder. Set aside.
  • In a plate, mix 2 tbsp ghee, rice flour and ½ tbsp maida.
  • Divide the dough in 6 equal parts and make balls out of them.
  • Flatten each ball into big rounds (roti) using a rolling pin.
  • Now take 1 roti and spread flour mixture evenly on it. Place another roti on it and apply flour mixture over it and spread evenly. Similarly, place the third roti and apply the flour mixture on it. 
  • Now roll the Rotis together. With the help of a knife, cut ½ inches thick circles. 
  • Repeat the same process for the remaining 3 rotis. 
  • Then, take one small circular piece and press it lightly with your palms and roll into a small Puri shape (Chirote) using rolling pin.
  • In the same manner, roll the remaining ones. 
  • Now, heat Puvi cold pressed Groundnut oil in a Deep Frying Pan.
  • Fry the prepared Chirote till light golden and crisp.
  • Take out the fried Chirote and Immediately soak in the warm sugar syrup.
  • Soak for 1-2 minutes. 
  • Take out on a plate. Your delicious Sugary delight is ready.
  • Serve hot and fresh or cool it down and store them in an air-tight container.
