Kaddu Ki Sabzi

  • 500 grams pumpkin, cubed
  • 1 bay leaf
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • ¼ tsp fenugreek seeds (Methi)
  • 1 pinch of asafoetida (hing)
  • 2 green chillies, slit
  • 1 tsp ginger paste
  • ¼ tsp turmeric powder
  • 1 tsp Kashmiri red chilli powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • ¾ tsp salt
  • ½ cup water
  • 1 tsp powdered jaggery
  • 1 tsp mango powder (amchur)
  • 2 tbsp coriander leaves, chopped
  • 4 tsp Puvi cold-pressed coconut oil

Preparation of Kaddu Ki Sabzi Recipe:

  • Heat 4 tsp of Puvi cold-pressed coconut oil in a pan.
  • Add mustard seeds, cumin seeds, fenugreek seeds, asafoetida, and slit green chillies. Allow the spices to splutter in the hot oil.
  • Add ginger paste, turmeric powder, and coriander powder. Sauté for 2 minutes.
  • Add the cubed pumpkin to the spice mix and mix well. Season with salt to taste and sauté the pumpkin for 2 minutes.
  • Pour ½ cup of water and add garam masala. Cook the pumpkin until it becomes tender.
  • Add 1 tsp of jaggery and mango powder. Mix well and continue cooking until the pumpkin absorbs the flavors.
  • Finally, add the chopped coriander leaves and turn off the heat.
  • Serve the kaddu sabzi with hot chapatis. Enjoy!
