Lauki Kofta Curry

Indulge in the flavors of Lauki Kofta, crispy bottle gourd fritters in a rich and aromatic gravy. Let's explore this delightful vegetarian recipe!

Lauki Kofta Curry Recipe Ingredients:

For Lauki Kofta:

  • 1 ½ cups grated Lauki (bottle gourd or dudhi)
  • ⅓ cup Besan (gram flour)
  • ½ tsp Cumin powder
  • ½ tsp Red chili powder
  • 1 Green chili, finely chopped
  • ½ tsp Ginger paste or freshly grated or crushed
  • ⅓ cup finely chopped Cilantro or coriander leaves
  • Salt to taste
  • PUVI Cold Pressed Mustard Oil for deep frying

To grind into a paste:

  • 1 medium Onion, roughly chopped
  • 2 medium Tomatoes, roughly chopped
  • ½ inch Ginger, chopped
  • 1 Green chili
  • 2 cloves Garlic

For Gravy:

  • 2 tbsp PUVI Cold Pressed Mustrad Oil
  • 4 Cloves
  • 2 Green cardamoms
  • 1-inch Cinnamon stick
  • 1 Bay leaf
  • 1 tsp Red chili powder
  • ¼ tsp Turmeric powder
  • 1 tsp Coriander powder
  • ½ tsp Cumin powder
  • Salt to taste
  • ⅓ cup Plain yogurt (dahi or curd), whisked
  • 1 ½ tsp Kasoori methi (Dried fenugreek leaves), lightly crushed
  • ½ tsp Garam masala

Preparation of Lauki Kofta Curry:

Making Lauki Kofta:

  1. Wash the bottle gourd, peel it, and grate it using a box grater. Measure 1 ½ cups of grated lauki. Squeeze out the water from the grated lauki, but keep the lauki water aside for the gravy.
  2. In a bowl, combine the squeezed lauki and the rest of the kofta ingredients. Mix well to form a sticky dough. Adjust the quantity of besan as needed.
  3. Heat PUVI Cold Pressed Mustard Oil in a kadai or deep pan for frying.
  4. Grease your hands with oil and shape small portions of the mixture into round balls.
  5. Carefully drop the koftas into the hot oil and fry them until golden brown from all sides, ensuring even browning.
  6. Once the koftas are golden brown, remove them from the oil and place them on a paper towel-lined plate.

Making the Paste:

Place all the ingredients for the paste in a grinder and blend until smooth. Set aside.

Making the Curry/Gravy:

  1. Heat PUVI Cold Pressed Mustard Oil in a pan over medium heat. Add the whole spices (cloves, green cardamoms, cinnamon stick, and bay leaf) and fry for a minute.
  2. Add the prepared ground paste and cook until the moisture evaporates and the oil starts to separate from the sides, stirring occasionally.
  3. Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for a minute.
  4. Pour in the reserved lauki water to achieve the desired gravy consistency.
  5. Reduce the heat and add whisked yogurt. Stir immediately to ensure everything is well combined.
  6. Increase the heat to medium and bring the gravy to a boil.
  7. Add garam masala and kasoori methi. Mix well.
  8. Gently add the koftas to the gravy, stirring carefully.
  9. Serve the Lauki Kofta curry hot with rice or roti.
