Rajgira ki Poori Recipe


  • 2 Cups Rajgira Atta (Amaranth Flour)
  • 1 Large Potato, boiled and peeled
  • Rock Salt (Sendha namak), to taste
  • Puvi Cold Pressed Groundnut Oil, for deep frying


  • In a mixing bowl, mash the boiled potato. Add Rajgira flour, and rock salt.
  • Add 2 tsp of water to knead. Do not use a lot of water. Knead it to a dough which is moist enough to be rolled.
  • Divide the dough in small equal portions. Roll them into Puris using rolling pin.
  • Heat Puvi cold pressed Groundnut oil in a kadai for deep frying.
  • Deep fry the pooris in oil till golden brown in color.
  • Once done, take it out on a paper towel.
  • Serve hot with Vrat ke Aloo.
